Rafał Targosz’s Take on Polish Cuisine.
The New Gavi Restaurant Menu Launches on August 15.
What does Polish cuisine mean today? In his first signature menu created for GAVI Restaurant, Rafał Targosz draws on local ingredients, familiar flavours and culinary tradition, viewing them through his own contemporary perspective.
Rafał Targosz, who has been part of Kraków’s gastronomic scene for many years, has taken on the role of Chef de Cuisine at GAVI Restaurant. From August 15, he will present a menu rooted in Poland, with a subtle French influence adding a touch of contemporary elegance to the overall concept.
The new menu takes guests on a journey through familiar flavours, presented in unexpected ways. It features, among other dishes, pierogi ruskie (Polish potato and cheese dumplings), awanturka made with smoked trout, Polish beef, game and winniczki – Polish vineyard snails. A particularly meaningful nod to culinary history is the “Ćwierczakiewiczowa”, a dish inspired by Lucyna Ćwierczakiewiczowa. It is a testament to how historic recipes can serve as inspiration for creating something entirely personal. Rafał draws on flavours we know and love, without trying to reinvent them at all costs. France enters this culinary story as an inspiration, while Poland remains its true protagonist.
– I don’t believe in cuisine that needs many words. I believe in flavour built on exceptional ingredients, respect for tradition and technique that brings out the very best in them, says Rafał Targosz.
The launch of the new menu marks the beginning of another chapter in the history of GAVI Restaurant, located at Bachleda Luxury Hotel Kraków – MGallery Collection. In addition to the new à la carte menu, the restaurant plans to develop signature tasting dinners, culinary events and projects that bring together the worlds of food and wine.
Wine remains an important part of the restaurant experience. GAVI’s wine list has been recognised with a Wine Spectator Award of Excellence, while the restaurant itself has been awarded two chef’s hats by the Gault&Millau guide.
Rafał Targosz’s new signature menu will be available from August 15, 2026.
