Przemysław Klima is a chef and co-owner of Bottiglieria 1881 that holds four toques in the Gault & Millau Poland Guide and is the first (and only) restaurant in Poland that has been awarded with two stars in the Michelin Guide.
He discovered his passion for food in his early days, observing his mom in his family home kitchen, enjoying meals she prepared for him and his brother but also – helping her prepare the food
Following his interest in food, he decided to attend a gastronomy vocational school. He gained his first professional experiences in hotel restaurants in Krakow, but – always keen on learning new things and willing to develop his skills and creativity – he soon joined Ancora restaurant one of the most acclaimed restaurants in the city, and later – leading restaurants in Poland, which changed the status quo of local gastronomy and brought first stars for Poland – Senses and Atelier Amaro.
Always pushing for more, he took internships in the most acclaimed restaurants in Europe such as Noma and Kadeau in Copenhagen.
In 2019 he joined the project of Bottiglieria 1881 in the position of head chef and co-owner, achieving the first Michelin star for his restaurant just one year later.
In his cooking he focuses on local ingredients from the Lesser Poland region, showing the richness of Polish terroir and produce. With the change of the seasons, wild berries, fresh herbs, fruit from local growers, mushrooms and venison take leading roles in the tasting menu of Bottiglieria 1881. Despite the fine dining form and meticulous presentations, Klima’s food is known and cherished for its warmth and sense of care, evoking memories of home feasts prepared by and for loved ones.
Comfort food takes the main stage in his first book “Fun Dining”, released in April 2024, together with opening his second, more casual restaurant “Bufet”.
