Seriola with white asparagus, buttermilk and trout roe; beef tartare with smoked pork fat, horseradish, buckwheat and sherry sauce; guinea fowl with chanterelles; or for dessert, a waffle with farmhouse cream, strawberries and wild strawberries – these are just a few examples of the very successful pairings.
